Pibil Feast

Today's not-so-favorite moments included . . .

. . .  my back aching in church.  Sitting for long periods is still hard on it.

Today's favorite moments included . . .

. . . Joy and Daniel playing happily together.

. . . the pibil dinner turning out very well.  The meat was just a tad dry (I used pork chops instead of pork shoulder because I had them on hand) and I ran out of sunlight and had to finish some things with the conventional oven and stove, but the meal as a whole was very good.  Even the kids each found a few things on the table to enjoy (rice, beans, mango).  I look forward to making this again, especially in the summer when there will be more hours of sunlight.
