Empanadas, Please

Today's not-so-favorite moments included . . .

. . .  washing lots of dishes tonight (see below).

Today's favorite moments included . . .


. . . seeing purple blossoms on my sage plant.

. . . having the missionaries join us for dinner.

. . . finding recipes online for Uruguayan foods I loved in my mission--canelones, empanadas, noquis.  I never realized that you baked canelones in the oven.  Dang--now I'm hungry.

And another thing . . .

. . . Cathy, do you ever wax nostalgic about Guatemalan food?

Sorry to be so long in responding. Yes, I do at times. Some of it I cook--the easy things, like fried plantains. When served with black beans, they are a typical simple Guatemalan meal.

Life is crazy for me right now. I wish I had more time to read and respond. I'll send you a facebook message to explain more sometime in the next few days. I know you don't use facebook often but it's easier than sending email for me sometimes. And right now, easy is good.

I love fried plantains. They never made them in Uruguay, but we've become happily acquainted since my return.
